Short answer
Shops strip with a dedicated coating remover, polish the residue away, or combine both. The method depends on how much film is left and how much clear coat remains underneath.
After removal the surface must be decontaminated and wiped before any new protection. Skipping that step is how failure number two starts.
What is happening to the car
Worn coatings stop sheeting, hold minerals, and look patchy in sun — darker or rainbowed high spots, dull hood, lively fenders.

Coastal cars also wear salt into the dead film. You are not only removing ceramic. You are removing a dirty ceramic sandwich.
What a detailer can do
Inspection in raking light. Test a remover in a small area. If the coating yields, strip and neutralize. If it only smears, mechanical removal with a finishing polish may be safer on thin paint.
Then iron, clay if needed, thickness check, correction only as far as the paint allows, panel wipe, new system — one system.
Ask what they will do if the coating was applied over uncorrected oxidation. Recoating that is wasting money.
What is no longer detailing
Paint that comes off with the coating was already failing. That is a body-shop conversation.
Home experiments with harsh solvents on plastic trim, glass coatings, and PPF edges create a bigger bill than a shop strip.
